How do I use parameters in a JDBC lookup query?

Something like:

select * from table1 where field1= ${record.value('/field')}

Is it possible?

That's exactly what you do. In the JDBC Lookup processor, set the SQL Query to something along the lines of

select * from table1 where field1 = ${record.value('/field')}

The record will be populated with the columns from the matching row.
